As I understand it, we used to import pistachios from Iran, where they were picked by hand, and importers dyed the shells to hide stains and blemishes. We no longer import Iranian nuts (from Iranian nuts?), and our domestic growers pick them by machine, leaving fewer stains and blemishes, thus no need to dye them.
My cousin thought the red ones grew that way and he swore they tasted differently. Which they don't..........but.........they did stain lips and tongue.
What about FINGERS that didn't come clean for two days? They did actually taste better that our pallid domestic version, in my opinion.
