Chicken fat (schmaltz)
Chicken fat
Many Jewish families (even those that didn't keep kosher)
had a jar of schmaltz in the fridge and used it like butter

Speaking of kids addressing adults by their first names... My daughter recently attended a private school here in California (from Kindergarten through 5th grade) where the students wore uniforms and everyone had to toe the line, as dictated by an imperious Head of School. Individuality and creativity were smothered, in my opinion, and we eventually switched schools. Incongruously, the teachers (and even the Head) were known to all by their first names.

Maybe this isn't the best spot to post this but the schmaltz reminded me of my "Aunt" Josephine. (Another thing from those times: if an adult was too familiar to call Mr. or Mrs., we would call them aunt or uncle because a child in the 1950's who was properly brought up would never address an adult by his or her first name.)

So, Aunt Josephine, who wasn't really my aunt had a house in Westmont, NJ with two kitchens. She used one kitchen for her everyday cooking and the other kitchen for long-term cooking and preserving. I thought she had two kitchens because she was Italian and liked to cook and feed people, which was true. It didn't occur to me until some time later that she must have bought the house from a Jewish family that kept kosher and maintained separate kitchens because they were scrupulous or they found it more convenient and they could afford it. I can image Aunt Josephine looking over the house and deciding it was perfect when she saw the two kitchens. She would have instructed her husband to make an offer right then to pre-empt another buyer.
